SOUTH AFRICAN CHAKALAKA

1/4 cup oil
2 large onions
2 or 3 hot peppers (choose from chili peppers, bell peppers)
3 garlic cloves
3 large tomatoes, diced
2 (15 oz) cans baked beans
1/3 cup ketchup, or more to taste
2 tsp curry powder
salt and pepper to taste
 
Put oil in large pan and over medium heat, cook onions, peppers, garlic, curry powder. Saute until soft approximately 5 minutes. Stir in tomatoes, boil, then reduce and simmer for 5 minutes. Stir in baked beans, salt, pepper and ketchup; heat. Can serve hot or cold. South Africans usually spoon Chakalaka hot onto mealie meal or "pap" which is made from yellow cornmeal.
